Summer Eats: Week 4

Eating our way through the summer

Today's dish is one of my favorites. It doesn't sound like a great combination, but it is: Bacon, Avocado and Egg Sandwich. I got it from Paula Deen.


  • one egg
  • 3 strips of bacon
  • half of an avocado
  • tomato slice
  • cream cheese (preferably whipped)
  • chives (if you got 'em)
  • butter
  • two slices of bread

It's pretty easy to make. Just fry the bacon in a skillet, then when you're done fry the egg. Butter up your bread while you are doing this and lightly toast it.

If you just have regular cream cheese you might want to put it in the microwave for about 10 seconds to soften it up. But if you have the whipped kind it spreads much better on regular bread. If you've got the chives, mix in some with the cream cheese before spreading it on both pieces of bread.

Put your bacon, egg, avocado slices and tomato slice in there and there you have it - a great sandwich! I'm telling you, it's awesome. And the great thing is you can have it for breakfast, lunch or dinner.
